The sky is the limit when it comes to roasted veggies! Honestly, there is no rule on which veggie you can or cannot put in the oven. The main thing, at least for me, is to achieve a perfect seasoning.
This time I chose broccoli, carrots and Brussels sprouts. Put them in a bowl and mixed them with olive oil, salt, pepper and garlic salt. Roast them for around 20 minutes at 400F, just make sure to move them around from time to time. Add your favorite protein and grain and you are all set for a healthy meal!
WHAT ELSE CAN I ROAST?
My other favorites are cauliflower, turnips, parsnips, butternut squash, zucchini, red onion and bell peppers. Are you hungry already? Roast away!
