FAVORITE SALAD... EVER!
Boy I thought I knew everything about salads until this recipe came across. Not only is colorful and beautiful, it is delicious and oh so nutritious!

It is labeled as a winter salad but I think you can eat it anytime of the year (if you can find the pomegranates, of course)
INGREDIENTS
1 cup of cooked quinoa
3 cups of spinach
2 cups of mandarine oranges
1 cup of pomegranate seeds
1/4 cup of pistachios, chopped
1/4 cup of crumbled feta cheese
For the dressing
Juice of one lemon
1 tablespoon of apple cider vinegar
1 tablespoon of sugar
1 teaspoon of garlic powder
1/2 cup of Greek yogurth
1/3 cup of extra virgin olive oil
1/2 teaspoon of salt
1/4 teaspoon of black pepper
In a large bowl combine quinoa, spinach, mandarine oranges, and pomegranate and lightly toss.
To make the dressing: In a small bowl whisk together the lemon, apple cider vinegar, sugar, garlic, Greek yogurt, olive oil, salt and pepper. Drizzle desired amount on salad and toss. Top with pistachios and feta cheese.
