SALMON'S SUPER SUPPER
Save some time by prepping the salmon ahead. Then just work on the rice and the green beans while the fish is in the oven.

INGREDIENTS
Salmon fillets
Olive oil
Dijon mustard
Lime
Agave nectar or maple syrup
Salt and pepper to taste
Green beans
White or whole grain rice, already cooked
Soy sauce and more lime
Mix olive oil, mustard, lime juice, syrup and S&P. Put the salmon in a ziploc bag with this mix and marinate in refrigerator for at least an hour.
Once you are ready to go, preheat oven at 400F. Place salmon on a baking tray with some cooking spray.
Start making the rice and your green beans. I usually have the rice already cooked so that saves me time. Put salmon in the oven and set timer for 20 minutes. Boil and sauté your green beans. Set everything aside to serve. After 20 minutes in the oven, salmon should be fully cooked, but broil for 5 minutes if you like it crispy on the top.
