BBQ chicken thighs, cucumber, celery and radish salad. Dressing was a simple mix of olive oil, white wine vinegar, lemon and some cotija. Buen provecho! (Oh yeah, recipe below!)
I promise you, it tastes as delicious as it looks.
Olive oil cooking spray
Cotija or parmesan cheese
Marinate the chicken thighs in the BBQ sauce for at least an hour. Get your air fryer out of the pantry.
Prepare the salad: thinly slice the cucumber, radishes and celery. Drizzle with olive oil, salt and pepper, vinegar, lemon juice, cheese.
Cook the thighs in the air fryer for 15 minutes at 390F. You might want to flip them halfway through. Trust me, thighs will never go super dry but do not over cook them!
